Incredible Healthy Pumpkin Recipes
Rachel from Clean Food Crush is back at Total Gym Pulse with another amazing recipe for health and fitness enthusiasts alike! Today, she introduces her Pumpkin Protein Oat Muffins which are perfect for breakfast, snacks, lunch or even before a great workout on The Total Gym.
Here’s how to make them!
Makes: 12 muffins
Ingredients:
• 2 cups dry rolled oats
• 2 scoops protein powder {I used vanilla whey }
• 2 cups all-natural Pumpkin Puree { one 15 oz can }
• 1 cup unsweetened almond milk
• 2 whole eggs, or 6 egg whites
• 1 tsp Stevia granules or sweetener of choice (2 Tbsp raw honey, or pure maple syrup)
• 1 tsp baking powder
• 1/2 tsp vanilla extract
• 1/2 tsp cinnamon
• 1/2 cup Cacao chips, or Lily’s brand dark chocolate sweetened with stevia
Directions:
- Preheat oven to 350 degrees f
- In large bowl combine all ingredients well.
- Scoop batter evenly into muffin tins, greased with coconut oil, or use cupcake liners.
- Bake 17-18 minutes, until centers are just set.
